  • 4 cups beef broth (or chicken broth)
  • 2 cups water
  • 1 (28-oz) can crushed tomatoes
  • 1 (15-oz) can tomato sauce
  • 2 tbsp tomato paste
  • 1 tsp sugar
  • 8 lasagna noodles, broken into bite-sized pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh basil, chopped (or 1 tsp dried basil)

Instructions

  • Cook the Meat – In a large pot or Dutch oven over medium heat, brown the ground beef with diced onion until fully cooked. Drain excess fat if needed.
  • Add Aromatics – Stir in garlic, salt, black pepper, Italian seasoning, and red pepper flakes. Cook for about 1 minute until fragrant.
  • Simmer the Base – Add beef broth, water, crushed tomatoes, tomato sauce, tomato paste, and sugar. Stir to combine and bring to a boil.
  • Cook the Noodles – Add broken lasagna noodles to the pot and reduce heat to a gentle simmer. Cook for about 10-12 minutes or until noodles are tender.
  • Prepare the Cheese Topping – In a small bowl, mix ricotta cheese, mozzarella, Parmesan, and fresh herbs until well combined.
  • Serve – Ladle the hot soup into bowls and top each serving with a generous scoop of the cheese mixture. Stir lightly to melt the cheese into the soup.
