  • 1/2 teaspoon chili powder
  • 1 jalapeño, finely chopped
  • 1/4 cup crumbled cotija cheese
  • 1 tablespoon chopped cilantro

For the Bacon:

  • 4 strips bacon, cooked and crumbled

For the Tacos:

  • 6 small corn tortillas
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup shredded lettuce (optional)
  • Lime wedges, for serving

Instructions

Step 1: Prepare the Fried Chicken

  1. Place chicken pieces in a bowl and cover with buttermilk. Marinate for at least 30 minutes (or up to overnight).
  2. In a separate bowl, mix flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
  3. Heat vegetable oil in a deep skillet over medium-high heat.
  4. Dredge marinated chicken in seasoned flour, ensuring an even coating.
  5. Fry in batches until golden brown and crispy, about 3-4 minutes per side. Drain on a paper towel-lined plate.

Step 2: Make the Street Corn Mixture

  1. In a medium bowl, mix corn kernels, mayonnaise, sour cream, lime juice, chili powder, jalapeño, cotija cheese, and cilantro.
  2. Stir until well combined. Set aside.

Step 3: Cook the Bacon

  1. In a skillet over medium heat, cook bacon until crispy.
  2. Remove and crumble into small pieces.

  1. Warm corn tortillas in a dry skillet or directly over an open flame for a slight char.
