- 1/4 cup crumbled cotija cheese

For the Bacon:
- 4 strips bacon, cooked and crumbled
For the Tacos:
- 6 small corn tortillas
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 1/2 cup shredded lettuce (optional)
- Lime wedges, for serving
Instructions
Step 1: Prepare the Fried Chicken
- Place chicken pieces in a bowl and cover with buttermilk. Marinate for at least 30 minutes (or up to overnight).
- In a separate bowl, mix flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
- Heat vegetable oil in a deep skillet over medium-high heat.
- Dredge marinated chicken in seasoned flour, ensuring an even coating.
- Fry in batches until golden brown and crispy, about 3-4 minutes per side. Drain on a paper towel-lined plate.
Step 2: Make the Street Corn Mixture
- In a medium bowl, mix corn kernels, mayonnaise, sour cream, lime juice, chili powder, jalapeño, cotija cheese, and cilantro.
- Stir until well combined. Set aside.
Step 3: Cook the Bacon
- In a skillet over medium heat, cook bacon until crispy.
- Remove and crumble into small pieces.
Step 4: Assemble the Tacos
- Warm corn tortillas in a dry skillet or directly over an open flame for a slight char.
- Layer each tortilla with fried chicken pieces, a spoonful of street corn mixture, and crispy bacon.
- Top with chopped red onion, cilantro, and shredded lettuce (if using).
