Instructions

Step 1: Prepare the Salmon

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Brush the salmon fillets with olive oil and season with salt and black pepper.
  3. Bake for 12–15 minutes, or until the salmon flakes easily with a fork.
  4. Let the salmon cool slightly before flaking it into small pieces with a fork.

Step 2: Make the Filling

  1. In a mixing bowl, combine the flaked salmon, lemon juice, lemon zest, chopped basil, Greek yogurt (or mayo), Dijon mustard, and diced shallot.
  2. Stir until well combined and creamy. Adjust seasoning if needed.

Step 3: Assemble the Rolls

  1. Slice the rolls in half and lightly toast them if desired.
  2. Layer with butter lettuce or arugula, followed by the salmon mixture.
  3. Add cucumber slices and any additional toppings of your choice.
