For the salmon filling:
- 2 salmon fillets (about 6 oz each)
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon fresh basil, chopped
- ¼ cup Greek yogurt or mayonnaise
- ½ teaspoon Dijon mustard
- 1 small shallot, finely diced
For the rolls:
- 4 brioche or whole wheat rolls
- 1 cup butter lettuce or arugula
- 1 small cucumber, thinly sliced
Optional toppings:
- Extra basil leaves for garnish
- Sliced avocado for creaminess
- A pinch of red pepper flakes for spice
Instructions
Step 1: Prepare the Salmon
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Brush the salmon fillets with olive oil and season with salt and black pepper.
- Bake for 12–15 minutes, or until the salmon flakes easily with a fork.
- Let the salmon cool slightly before flaking it into small pieces with a fork.
Step 2: Make the Filling
- In a mixing bowl, combine the flaked salmon, lemon juice, lemon zest, chopped basil, Greek yogurt (or mayo), Dijon mustard, and diced shallot.
- Stir until well combined and creamy. Adjust seasoning if needed.
Step 3: Assemble the Rolls
- Slice the rolls in half and lightly toast them if desired.
- Layer with butter lettuce or arugula, followed by the salmon mixture.
- Add cucumber slices and any additional toppings of your choice.
- Serve immediately and enjoy!
