  • ½ cup sour cream (for serving)

Instructions

Step 1: Prepare the Beef Filling

  1. In a large skillet over medium heat, cook the ground beef until browned. Drain any excess grease.
  2. Add the diced onion and cook until softened, about 3 minutes.
  3. Stir in the minced garlic, cumin, chili powder, smoked paprika, salt, and black pepper. Cook for another 1-2 minutes.
  4. Mix in the green chilies, black beans, and corn if using. Remove from heat and set aside.

Step 2: Warm the Tortillas

  1. Lightly warm the tortillas in a dry skillet or microwave for about 10-15 seconds to make them pliable.

Step 3: Assemble the Enchiladas

  1. Spread about ½ cup of enchilada sauce at the bottom of a 9×13-inch baking dish.
  2. Place a spoonful of the beef mixture onto each tortilla, sprinkle with cheese, and roll them up tightly.
  3. Arrange the filled tortillas seam-side down in the baking dish.
