- ½ cup diced tomatoes (optional, for serving)
Instructions
Step 1: Prepare the Beef Filling
- In a large skillet over medium heat, cook the ground beef until browned. Drain any excess grease.
- Add the diced onion and cook until softened, about 3 minutes.
- Stir in the minced garlic, cumin, chili powder, smoked paprika, salt, and black pepper. Cook for another 1-2 minutes.
- Mix in the green chilies, black beans, and corn if using. Remove from heat and set aside.
Step 2: Warm the Tortillas
- Lightly warm the tortillas in a dry skillet or microwave for about 10-15 seconds to make them pliable.
Step 3: Assemble the Enchiladas
- Spread about ½ cup of enchilada sauce at the bottom of a 9×13-inch baking dish.
- Place a spoonful of the beef mixture onto each tortilla, sprinkle with cheese, and roll them up tightly.
- Arrange the filled tortillas seam-side down in the baking dish.
Step 4: Add Sauce and Cheese
- Pour the remaining enchilada sauce evenly over the top of the enchiladas.
- Sprinkle with the remaining shredded cheese.
Step 5: Bake the Enchiladas
- Preheat the oven to 375°F (190°C).
- Cover the dish with foil and bake for 20 minutes.
- Remove the foil and bake for another 10 minutes or until the cheese is melted and bubbly.
