A hearty and flavorful slow cooker cowboy casserole made with ground beef, potatoes, beans, and cheese. Perfect for busy nights, potlucks, and meal prep!

- 1 lb ground beef
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 can (15 oz) diced tomatoes, undrained
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 4 medium potatoes, diced
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 cup milk
- 1/2 cup beef broth
Instructions
- Brown the Beef: In a large skillet, cook ground beef over medium heat until browned. Drain excess grease. Add chopped onion and garlic, cooking for another 2–3 minutes until fragrant.
- Layer Ingredients in Slow Cooker: Place diced potatoes at the bottom of the slow cooker. Add the cooked beef mixture, then layer with diced tomatoes, kidney beans, and corn.
- Mix in Seasonings and Liquids: In a small bowl, mix condensed cream of mushroom soup, milk, beef broth, salt, black pepper, chili powder, and smoked paprika. Pour over the ingredients in the slow cooker.
- Cook Low and Slow: Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender.
- Add Cheese and Serve: Sprinkle shredded cheddar cheese on top about 15 minutes before serving. Cover and let it melt. Stir slightly and serve warm.
