Ingredients

  • 1.5 lbs beef chuck roast, cut into bite-sized pieces

  • 4 cups beef broth

  • 1 can (14.5 oz) diced tomatoes

  • 6 cloves garlic, minced

  • 1 small onion, finely chopped

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • ½ tsp red pepper flakes (optional)

  • Salt and black pepper to taste

  • 2 tbsp tomato paste

  • 1 tbsp Worcestershire sauce

  • 8 oz penne or rotini pasta

  • ½ cup heavy cream (optional, for a creamy version)

  • ½ cup freshly grated Parmesan cheese

  • Fresh parsley for garnish


Instructions

  • Prepare the Beef

    • Trim excess fat from the beef and cut into bite-sized pieces.

    • Sear beef in a skillet over medium heat for 2–3 minutes per side.

  • Assemble in Slow Cooker

    • Transfer beef to the slow cooker.

    • Add onion, garlic, diced tomatoes, tomato paste, Worcestershire sauce, beef broth, oregano, basil, red pepper flakes, salt, and pepper. Stir well.

  • Slow Cook

    • Cover and cook on low for 7–8 hours or high for 4–5 hours until beef is tender.

  • Cook Pasta Separately

    • About 20 minutes before serving, cook pasta according to package directions. Drain and set aside.

  • Final Touches

    • Stir cooked pasta into the slow cooker.

    • Add heavy cream if using, then mix well.
