- Pasta: 12 oz spaghetti or linguine
- Protein: 3 cups cooked turkey, shredded or cubed
- Vegetables:
- 1 small onion, diced
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced

- Sauce:
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 2 cups chicken or turkey broth
- 1 cup heavy cream (or half-and-half)
- 1/2 cup sour cream
- 1/2 cup grated Parmesan cheese
- 1 1/2 cups shredded mozzarella or cheddar cheese
- Seasonings:
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1/4 tsp nutmeg (optional)
- Topping:
- 1/2 cup breadcrumbs
- 2 tbsp melted butter
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook pasta according to package instructions until al dente. Drain and set aside.
Step 2: Prepare the Sauce
- In a large skillet over medium heat, melt the butter.
- Add the onions and cook until softened (about 3 minutes).
- Stir in the garlic and mushrooms; cook until mushrooms release moisture and begin to brown.
- Sprinkle in the flour and stir well for 1 minute to eliminate the raw flour taste.
- Slowly whisk in the broth, ensuring no lumps form. Simmer for 3 minutes until thickened.
- Reduce heat to low and stir in the heavy cream, sour cream, Parmesan cheese, salt, pepper, thyme, and nutmeg. Simmer for another 2 minutes until creamy.
Step 3: Assemble the Casserole
- Preheat oven to 375°F (190°C).
- In a large mixing bowl, combine the cooked pasta, turkey, and sauce. Stir in peas if using.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Sprinkle shredded mozzarella or cheddar cheese over the top.
Step 4: Make the Topping
- In a small bowl, mix breadcrumbs with melted butter. Sprinkle over the casserole.
Step 5: Bake and Serve
- Bake uncovered for 25–30 minutes, or until the cheese is melted and bubbly with a golden crust.
