    • 1/2 tsp dried thyme
    • 1/4 tsp nutmeg (optional)
  • Topping:
    • 1/2 cup breadcrumbs
    • 2 tbsp melted butter

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook pasta according to package instructions until al dente. Drain and set aside.

Step 2: Prepare the Sauce

  1. In a large skillet over medium heat, melt the butter.
  2. Add the onions and cook until softened (about 3 minutes).
  3. Stir in the garlic and mushrooms; cook until mushrooms release moisture and begin to brown.
  4. Sprinkle in the flour and stir well for 1 minute to eliminate the raw flour taste.
  5. Slowly whisk in the broth, ensuring no lumps form. Simmer for 3 minutes until thickened.
  6. Reduce heat to low and stir in the heavy cream, sour cream, Parmesan cheese, salt, pepper, thyme, and nutmeg. Simmer for another 2 minutes until creamy.

Step 3: Assemble the Casserole

  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cooked pasta, turkey, and sauce. Stir in peas if using.
  3. Transfer the mixture to a greased 9×13-inch baking dish.
  4. Sprinkle shredded mozzarella or cheddar cheese over the top.

Step 4: Make the Topping

  1. In a small bowl, mix breadcrumbs with melted butter. Sprinkle over the casserole.
