  • 8 ounces cream cheese, softened
  • 1/2 cup half-and-half or heavy cream
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded white American cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 teaspoon cumin
  • 1/2 cup diced tomatoes (optional, for garnish)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Sauté Aromatics
    In a large skillet over medium heat, melt the butter. Add the chopped onion and sauté for 2-3 minutes until soft. Stir in the garlic and cook for another 30 seconds until fragrant.
  2. Cook the Spinach
    Add the drained spinach to the skillet and stir to combine. Cook for 2 minutes, allowing any excess moisture to evaporate.
  3. Add the Chilies and Cream Cheese
    Mix in the diced green chilies and jalapeño (if using). Reduce the heat to low and add the softened cream cheese. Stir continuously until the cream cheese is melted and fully incorporated.
  4. Melt the Cheeses
    Pour in the half-and-half or heavy cream, then gradually stir in the shredded Monterey Jack and white American cheese. Continue stirring until the cheese is completely melted and smooth.
  5. Season and Serve
    Add salt, black pepper, cayenne (if using), and cumin. Stir well to blend the flavors. Once fully combined, transfer the dip to a serving dish and garnish with diced tomatoes and chopped cilantro. Serve warm with tortilla chips.
