For the Glaze:

  • 1/2 cup powdered sugar
  • 12 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the Crust:
    • Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
    • In a bowl, combine crushed graham crackers, sugar, cinnamon, and melted butter.
    • Press firmly into the bottom of the pan and bake for 8 minutes. Set aside to cool.
  2. Make the Cheesecake Filling:
    • In a large bowl, beat cream cheese and sugar until smooth.
    • Add eggs one at a time, mixing well after each.
    • Mix in vanilla extract and sour cream until fully combined.
  3. Create the Cinnamon Swirl:
    • In a small bowl, mix melted butter, brown sugar, cinnamon, and vanilla extract.
    • Pour half of the cheesecake batter over the crust.
    • Drizzle half of the cinnamon mixture over the batter and swirl with a knife.
    • Repeat with remaining cheesecake batter and cinnamon mixture.
  4. Bake the Cheesecake:
    • Bake for 40-45 minutes until the center is slightly jiggly but set.
    • Turn off the oven and let cool inside with the door slightly open for 1 hour.
    • Refrigerate for at least 4 hours or overnight.
  5. Prepare the Glaze:
    • Whisk together powdered sugar, milk, and vanilla extract.
    • Drizzle over chilled cheesecake before serving.
