For the Crust:
- 1 1/2 cups crushed graham crackers (or vanilla wafers)
- 1/4 cup granulated sugar
- 1/2 teaspoon cinnamon
- 6 tablespoons melted butter
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
For the Cinnamon Swirl:
- 1/4 cup unsalted butter, melted
- 1/2 cup brown sugar
- 1 tablespoon ground cinnamon
- 1 teaspoon vanilla extract
For the Glaze:
- 1/2 cup powdered sugar
- 1–2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Prepare the Crust:
- Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a bowl, combine crushed graham crackers, sugar, cinnamon, and melted butter.
- Press firmly into the bottom of the pan and bake for 8 minutes. Set aside to cool.
- Make the Cheesecake Filling:
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each.
- Mix in vanilla extract and sour cream until fully combined.
- Create the Cinnamon Swirl:
- In a small bowl, mix melted butter, brown sugar, cinnamon, and vanilla extract.
- Pour half of the cheesecake batter over the crust.
- Drizzle half of the cinnamon mixture over the batter and swirl with a knife.
- Repeat with remaining cheesecake batter and cinnamon mixture.
- Bake the Cheesecake:
- Bake for 40-45 minutes until the center is slightly jiggly but set.
- Turn off the oven and let cool inside with the door slightly open for 1 hour.
- Refrigerate for at least 4 hours or overnight.
- Prepare the Glaze:
- Whisk together powdered sugar, milk, and vanilla extract.
- Drizzle over chilled cheesecake before serving.
