- 1 lb sirloin steak, thinly sliced
- 1 tbsp olive oil
- 1 small onion, thinly sliced
- 1 small green bell pepper, thinly sliced
- 1 small red bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1 package (20 oz) cheese tortellini
- 1 tbsp butter
- 1 tbsp all-purpose flour
- 1 ½ cups whole milk
- 1 cup shredded provolone cheese
- ½ cup shredded mozzarella cheese
- ½ tsp salt (or to taste)
- ½ tsp black pepper
- ½ tsp smoked paprika (optional)
- ½ tsp crushed red pepper flakes (optional)
- 1 tbsp Worcestershire sauce
- Fresh parsley, for garnish
Instructions
1. Cook the Steak and Vegetables
- Heat olive oil in a large skillet over medium-high heat.
- Add sliced steak, season with salt, pepper, and paprika (if using), and cook until browned (3–4 minutes). Remove and set aside.
- In the same skillet, sauté onions and peppers until soft (about 5 minutes).
- Add minced garlic and cook for another 30 seconds. Return the steak to the skillet and stir in Worcestershire sauce. Set aside.
2. Cook the Tortellini
- Bring a large pot of salted water to a boil.
- Cook cheese tortellini according to package instructions, then drain and set aside.
3. Make the Provolone Cheese Sauce
- In a saucepan, melt butter over medium heat.
- Whisk in flour and cook for about 1 minute.
- Slowly whisk in milk, stirring constantly until smooth.
- Reduce heat to low and add provolone and mozzarella cheese, stirring until melted and creamy.
4. Combine Everything
- Pour cheese sauce over the cooked tortellini and stir to coat.
- Add the steak and vegetable mixture, tossing everything together.
- Adjust seasoning if needed, then garnish with fresh parsley.
