  • 1 package (20 oz) cheese tortellini
  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • 1 ½ cups whole milk
  • 1 cup shredded provolone cheese
  • ½ cup shredded mozzarella cheese
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ½ tsp smoked paprika (optional)
  • ½ tsp crushed red pepper flakes (optional)
  • 1 tbsp Worcestershire sauce
  • Fresh parsley, for garnish

Instructions

1. Cook the Steak and Vegetables

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced steak, season with salt, pepper, and paprika (if using), and cook until browned (3–4 minutes). Remove and set aside.
  3. In the same skillet, sauté onions and peppers until soft (about 5 minutes).
  4. Add minced garlic and cook for another 30 seconds. Return the steak to the skillet and stir in Worcestershire sauce. Set aside.

2. Cook the Tortellini

  1. Bring a large pot of salted water to a boil.
  2. Cook cheese tortellini according to package instructions, then drain and set aside.

3. Make the Provolone Cheese Sauce

  1. In a saucepan, melt butter over medium heat.
  2. Whisk in flour and cook for about 1 minute.
  3. Slowly whisk in milk, stirring constantly until smooth.
  4. Reduce heat to low and add provolone and mozzarella cheese, stirring until melted and creamy.

4. Combine Everything

  1. Pour cheese sauce over the cooked tortellini and stir to coat.
  2. Add the steak and vegetable mixture, tossing everything together.
  3. Adjust seasoning if needed, then garnish with fresh parsley.
