  • 2 green onions, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook the beef mixture: In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onions are soft. Drain excess grease.
  3. Simmer: Add the diced tomatoes, tomato sauce, Italian seasoning, salt, and black pepper. Simmer for 5-10 minutes.
  4. Cook the noodles: Boil egg noodles according to package directions until al dente. Drain and toss with melted butter.
  5. Mix the creamy layer: In a bowl, combine sour cream and cottage cheese.
  6. Assemble the casserole:
    • Spread half of the buttered noodles in the prepared baking dish.
    • Layer with half of the sour cream mixture.
    • Add half of the beef mixture.
    • Repeat the layers, finishing with shredded cheddar and mozzarella cheese.
  7. Bake: Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes, or until cheese is bubbly and golden.
