For the Bang Bang Sauce:

- 1 tablespoon honey
- 1 teaspoon rice vinegar

- 1 cup shredded lettuce or coleslaw mix

Instructions
Step 1: Prepare the Chicken
- In a bowl, combine buttermilk and the egg. Add chicken pieces and let them soak for at least 30 minutes (or up to 2 hours).
- In a separate bowl, mix flour, cornstarch, salt, black pepper, garlic powder, and paprika.
- Remove chicken from the buttermilk mixture, letting excess drip off, and coat in the flour mixture.
- Press the coated chicken into panko breadcrumbs for extra crispiness.
Step 2: Fry the Chicken
- Heat vegetable oil in a deep pan or fryer to 350°F (175°C).
- Fry the chicken in batches for 3-4 minutes per side, until golden brown and cooked through.
- Transfer to a paper towel-lined plate to drain excess oil.
Step 3: Make the Bang Bang Sauce
- In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth.
Step 4: Assemble the Sliders
- Toss the crispy chicken pieces in the Bang Bang sauce until fully coated.
- Toast the slider buns for a slight crunch (optional).
- Layer each bun with shredded lettuce or coleslaw, a piece of coated chicken, and pickles if using.
