  • 4 oz goat cheese, softened

  • 1 garlic clove, minced
  • 2 tbsp breadcrumbs (optional, for added texture)
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional, for heat)
  • 2 tbsp chopped walnuts or pecans (optional, for crunch)

Instructions

Step 1: Prepare the Mushrooms

  1. Preheat oven to 375°F (190°C).
  2. Clean mushrooms with a damp cloth and remove stems. Finely chop the stems and set aside.
  3. Lightly brush mushroom caps with olive oil and place them on a baking sheet, hollow side up.

Step 2: Make the Filling

  1. Heat a pan over medium heat and add 1 tbsp olive oil.
  2. Sauté chopped mushroom stems and garlic for 2-3 minutes until softened.
  3. Stir in spinach and cook until wilted, about 1 minute.
  4. Remove from heat and mix in goat cheese, cranberries, balsamic glaze, salt, black pepper, and red pepper flakes (if using).
  5. If using, stir in breadcrumbs and chopped nuts for added texture.

Step 3: Stuff the Mushrooms

  1. Spoon filling into mushroom caps, pressing gently.
  2. Arrange stuffed mushrooms on the baking sheet.

Step 4: Bake & Finish

  1. Bake for 15-18 minutes, until mushrooms are tender and filling is slightly golden.
  2. Remove from oven and drizzle with additional balsamic glaze before serving.
