- 16 large cremini or white button mushrooms
- 4 oz goat cheese, softened
- 1/2 cup fresh spinach, finely chopped
- 1/4 cup dried cranberries, chopped
- 2 tbsp balsamic glaze (plus more for drizzling)
- 1 garlic clove, minced
- 2 tbsp breadcrumbs (optional, for added texture)
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional, for heat)
- 2 tbsp chopped walnuts or pecans (optional, for crunch)
Instructions
Step 1: Prepare the Mushrooms
- Preheat oven to 375°F (190°C).
- Clean mushrooms with a damp cloth and remove stems. Finely chop the stems and set aside.
- Lightly brush mushroom caps with olive oil and place them on a baking sheet, hollow side up.
Step 2: Make the Filling
- Heat a pan over medium heat and add 1 tbsp olive oil.
- Sauté chopped mushroom stems and garlic for 2-3 minutes until softened.
- Stir in spinach and cook until wilted, about 1 minute.
- Remove from heat and mix in goat cheese, cranberries, balsamic glaze, salt, black pepper, and red pepper flakes (if using).
- If using, stir in breadcrumbs and chopped nuts for added texture.
Step 3: Stuff the Mushrooms
- Spoon filling into mushroom caps, pressing gently.
- Arrange stuffed mushrooms on the baking sheet.
Step 4: Bake & Finish
- Bake for 15-18 minutes, until mushrooms are tender and filling is slightly golden.
- Remove from oven and drizzle with additional balsamic glaze before serving.
