Ingredients
- 1.5 lbs boneless, skinless chicken thighs (or breasts)
- 3 stalks lemongrass, trimmed and finely minced (or 3 tbsp lemongrass paste)
- 3 cloves garlic, minced
- 1 small shallot, finely chopped
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp honey or brown sugar
- ½ tsp black pepper
- ½ tsp red pepper flakes (optional)
- 1 tbsp vegetable oil (for cooking)
- Fresh cilantro, lime wedges, and sliced chili (for garnish)
Instructions
Step 1: Prepare the Marinade
- In a bowl, mix lemongrass, garlic, shallot, fish sauce, soy sauce, oyster sauce, honey (or sugar), black pepper, and red pepper flakes.
Step 2: Marinate the Chicken
- Add the chicken and coat evenly with the marinade.
- Cover and refrigerate for at least 30 minutes (preferably 2-4 hours or overnight).
Step 3: Cook the Chicken
Pan-Frying Method:
4. Heat vegetable oil in a pan over medium-high heat.
5. Cook chicken for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F).
Grilling Method:
6. Preheat a grill or grill pan to medium-high heat.
7. Cook chicken for about 4-5 minutes per side until slightly charred and cooked through.
Step 4: Serve and Garnish
- Slice the chicken and serve over rice, noodles, or salad.
