  • 1/2 cup cucumber, finely diced

  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1 tablespoon extra virgin olive oil (optional)
  • 1/4 teaspoon ground cumin (optional)
  • 1/4 cup crumbled feta cheese (optional)

Instructions

  1. Prepare the Ingredients
    • Dice the cucumber and red onion.
    • Chop the fresh dill and mince the garlic.
  2. Make the Tzatziki Dressing
    • In a large mixing bowl, combine Greek yogurt, lemon juice, minced garlic, salt, pepper, olive oil (if using), and cumin (if using).
    • Stir well until smooth and creamy.
  3. Mix the Chicken Salad
    • Add the chicken, cucumber, red onion, and dill to the bowl.
    • Toss until well coated in the tzatziki dressing.
  4. Taste and Adjust
    • Adjust seasoning as needed.
    • Fold in feta cheese if using.
  5. Chill & Serve
    • Refrigerate for at least 15–20 minutes before serving.
    • Serve chilled in sandwiches, wraps, lettuce cups, or with pita bread.
