- 500g all-purpose flour
- 1 packet (7g) instant dry yeast
- 1 teaspoon salt
- 1 teaspoon sugar
- 300ml warm water
- 2 tablespoons olive oil
- 1 tablespoon yogurt (optional, for extra softness)
- 1 egg yolk (for brushing)
- 1 tablespoon sesame or nigella seeds (for topping)
Instructions
Step 1: Prepare the Dough
- In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5-10 minutes until it becomes frothy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
- Mix with a wooden spoon or your hands until a rough dough forms.
- Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Step 2: Shape the Bread
- Once the dough has risen, punch it down to release air.
- Transfer it to a floured surface and divide it into two equal parts.
- Shape each portion into a round or oval shape, about 1 inch thick.
- Place the shaped dough on a baking sheet lined with parchment paper.
- Cover with a cloth and let it rest for another 30 minutes.
Step 3: Bake the Bread
- Preheat your oven to 220°C (430°F).
- In a small bowl, mix the egg yolk with a teaspoon of water and brush it over the bread.
- Sprinkle sesame or nigella seeds on top.
- Bake in the preheated oven for about 15-20 minutes or until golden brown and puffed up.
- Remove from the oven and let cool slightly before serving.

- Herb-infused: Add dried herbs such as oregano or thyme to the dough for a fragrant touch.
- Cheese-filled: Stuff the dough with feta or mozzarella cheese before baking for a cheesy surprise.
- Whole wheat version: Substitute half of the all-purpose flour with whole wheat flour for a healthier alternative.
