For Serving:
- 2 cups cooked jasmine or basmati rice
- 1 small cucumber, thinly sliced
- 1 carrot, julienned
- 2 green onions, chopped
- 1 tablespoon sesame seeds
- Fresh cilantro or parsley for garnish (optional)
Instructions
- Prepare the Chicken: Toss chicken pieces with cornstarch in a bowl until evenly coated.
- Cook the Chicken: Heat vegetable oil in a skillet over medium-high heat. Add chicken and cook for 4-5 minutes per side until golden brown and fully cooked. Remove and set aside.
- Make the Sauce: In the same pan, combine soy sauce, honey, hoisin sauce, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes. Simmer for 2 minutes.
- Thicken the Sauce: Stir in the cornstarch-water mixture, stirring continuously until the sauce thickens.
- Combine: Return chicken to the pan, tossing to coat in the sticky sauce. Cook for 1-2 more minutes.
- Assemble the Bowls: Divide rice into bowls, top with sticky chicken, sliced cucumber, julienned carrots, and chopped green onions.
- Garnish and Serve: Sprinkle sesame seeds and fresh cilantro on top. Enjoy immediately!
