For the Beef & Marinade:
- 12 oz beef sirloin or flank steak, thinly sliced
- 2 tablespoons soy sauce
- 1 teaspoon cornstarch
- 1 teaspoon sesame oil
For the Sauce:
- 3 tablespoons soy sauce
- 2 tablespoons honey or brown sugar
- 1 tablespoon oyster sauce
- 1 teaspoon rice vinegar
- 1 teaspoon sriracha or chili paste (adjust to taste)
- 1/2 teaspoon black pepper
For the Stir-Fry:
- 8 oz egg noodles or rice noodles
- 2 tablespoons vegetable oil
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 2 green onions, sliced
- 1/2 cup snap peas or bok choy (optional)
- 1 teaspoon sesame seeds (for garnish)
- Fresh cilantro or extra green onions for garnish
Instructions

Marinate the Beef
- In a bowl, mix the sliced beef with soy sauce, cornstarch, and sesame oil. Let sit for 10 minutes.

Cook the Noodles
- Cook noodles according to package instructions. Drain, toss with a little oil to prevent sticking, and set aside.

Prepare the Sauce
- In a small bowl, whisk together soy sauce, honey, oyster sauce, rice vinegar, sriracha, and black pepper.

Sear the Beef
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
- Add beef in a single layer, sear for 1-2 minutes per side until browned and caramelized. Remove and set aside.

Stir-Fry the Vegetables
- Add another tablespoon of oil to the pan. Sauté garlic and ginger for 30 seconds.
- Add bell pepper, carrot, and snap peas, stir-frying for 2-3 minutes until slightly tender but still crisp.

Combine Everything
- Return beef to the pan, then pour in the prepared sauce. Toss to coat.
- Add cooked noodles and mix until evenly coated and heated through.

Garnish & Serve
- Remove from heat, garnish with sesame seeds, green onions, and fresh cilantro. Serve immediately.
