For the Rotini and Garlic Parmesan Sauce:

  • 12 oz rotini pasta
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups whole milk (or heavy cream)
  • 1/2 cup grated parmesan cheese
  • 1/2 tsp Italian seasoning
  • Salt and black pepper, to taste
  • 1 tbsp chopped parsley (optional, for garnish)

Instructions

 Cook the Rotini

  • Bring a large pot of salted water to a boil. Add rotini and cook until al dente according to package instructions.
  • Reserve 1/2 cup of pasta water, then drain and set aside.

2. Sear the Steak Bites

  • Heat olive oil in a large skillet over medium-high heat.
  • Season steak cubes with paprika, garlic powder, salt, and pepper.
  • Sear the steak bites for 2–3 minutes per side, ensuring a golden crust. Avoid overcrowding; cook in batches if needed.
  • Add minced garlic in the last minute of cooking. Toss, then remove steak from the skillet and set aside.

3. Make the Garlic Parmesan Sauce

  • Reduce the skillet heat to medium and melt butter.
  • Add minced garlic and sauté for 30 seconds until fragrant.
  • Stir in flour and cook for 1 minute, creating a roux.
  • Gradually whisk in milk, avoiding lumps. Simmer for 2–3 minutes until slightly thickened.
  • Stir in parmesan cheese, Italian seasoning, salt, and pepper. Adjust to taste.

4. Combine and Serve

  • Toss cooked rotini in the sauce, adding reserved pasta water if needed for desired consistency.
  • Fold in steak bites.
  • Garnish with parsley (optional) and serve immediately.
