Instructions
Cook the Rotini
- Bring a large pot of salted water to a boil. Add rotini and cook until al dente according to package instructions.
- Reserve 1/2 cup of pasta water, then drain and set aside.
2. Sear the Steak Bites
- Heat olive oil in a large skillet over medium-high heat.
- Season steak cubes with paprika, garlic powder, salt, and pepper.
- Sear the steak bites for 2–3 minutes per side, ensuring a golden crust. Avoid overcrowding; cook in batches if needed.
- Add minced garlic in the last minute of cooking. Toss, then remove steak from the skillet and set aside.
3. Make the Garlic Parmesan Sauce
- Reduce the skillet heat to medium and melt butter.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Stir in flour and cook for 1 minute, creating a roux.
- Gradually whisk in milk, avoiding lumps. Simmer for 2–3 minutes until slightly thickened.
- Stir in parmesan cheese, Italian seasoning, salt, and pepper. Adjust to taste.
4. Combine and Serve
- Toss cooked rotini in the sauce, adding reserved pasta water if needed for desired consistency.
- Fold in steak bites.
- Garnish with parsley (optional) and serve immediately.
