  • 1/2 cup mayonnaise or sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup Parmesan cheese
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Old Bay seasoning (optional)
  • 1 cup crushed Ritz crackers or breadcrumbs
  • 2 tablespoons butter, melted
  • 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. Preheat the Oven – Set oven to 350°F (175°C).
  2. Sauté the Vegetables – In a skillet over medium heat, sauté onion, bell pepper, and mushrooms until soft, about 5 minutes. Add garlic and cook for another minute.
  3. Prepare the Shrimp – Add shrimp to the skillet and cook until pink, about 3 minutes. Remove from heat.
  4. Mix the Ingredients – In a large bowl, combine cooked shrimp and vegetables with cream of mushroom soup, mayonnaise or sour cream, cheddar cheese, Parmesan cheese, paprika, salt, pepper, and Old Bay seasoning (if using). Stir in cooked rice or pasta if desired.
  5. Assemble the Casserole – Transfer mixture to a greased 9×13-inch baking dish.
  6. Prepare the Topping – In a small bowl, mix crushed crackers or breadcrumbs with melted butter. Sprinkle evenly over casserole.
  7. Bake – Bake for 25–30 minutes until golden brown and bubbly.
  8. Garnish and Serve – Let cool for 5 minutes, then sprinkle with fresh parsley before serving.
