For the Gorgonzola Alfredo Sauce:
- 2 tablespoons butter
- 1 ½ cups heavy cream
- 1 cup grated Parmesan cheese
- ½ cup crumbled Gorgonzola cheese
- 2 cloves garlic, minced
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional, for heat)
For the Pasta:
- 12 ounces fettuccine or your preferred pasta
- 1 tablespoon salt (for boiling water)
For Garnish:
- 2 tablespoons fresh parsley, chopped
- Additional crumbled Gorgonzola (optional)
- Freshly grated Parmesan
Instructions
1. Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook the pasta according to package instructions until al dente.
- Drain and set aside, reserving ½ cup of pasta water.
2. Cook the Steak
- Heat olive oil and butter in a large skillet over medium-high heat.
- Add the steak pieces, seasoning with salt and black pepper.
- Sear for 3-4 minutes per side until browned and cooked to your desired doneness.
- Stir in the minced garlic and cook for an additional 30 seconds.
- Remove the steak from the pan and set aside.
3. Make the Gorgonzola Alfredo Sauce
- In the same skillet, melt the butter over medium heat.
- Add minced garlic and sauté for 1 minute until fragrant.
- Pour in the heavy cream and bring to a gentle simmer.
- Stir in Parmesan cheese and Gorgonzola, allowing them to melt and create a creamy sauce.
- Season with salt, black pepper, and red pepper flakes if using.
- If the sauce is too thick, add reserved pasta water a little at a time to reach the desired consistency.
4. Combine Everything
- Add the cooked pasta to the skillet and toss to coat in the sauce.
- Return the steak to the pan, stirring gently to combine.
- Let everything heat through for 1-2 minutes.
5. Serve and Garnish
- Divide the pasta onto plates or into bowls.
- Garnish with fresh parsley, additional Gorgonzola crumbles, and freshly grated Parmesan.
