  • 2 tablespoons butter
  • 1 ½ cups heavy cream
  • 1 cup grated Parmesan cheese
  • ½ cup crumbled Gorgonzola cheese
  • 2 cloves garlic, minced
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional, for heat)

For the Pasta:

  • 12 ounces fettuccine or your preferred pasta
  • 1 tablespoon salt (for boiling water)

For Garnish:

  • 2 tablespoons fresh parsley, chopped
  • Additional crumbled Gorgonzola (optional)
  • Freshly grated Parmesan

Instructions

1. Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Cook the pasta according to package instructions until al dente.
  • Drain and set aside, reserving ½ cup of pasta water.

2. Cook the Steak

  • Heat olive oil and butter in a large skillet over medium-high heat.
  • Add the steak pieces, seasoning with salt and black pepper.
  • Sear for 3-4 minutes per side until browned and cooked to your desired doneness.
  • Stir in the minced garlic and cook for an additional 30 seconds.
  • Remove the steak from the pan and set aside.

3. Make the Gorgonzola Alfredo Sauce

  • In the same skillet, melt the butter over medium heat.
  • Add minced garlic and sauté for 1 minute until fragrant.
  • Pour in the heavy cream and bring to a gentle simmer.
  • Stir in Parmesan cheese and Gorgonzola, allowing them to melt and create a creamy sauce.
  • Season with salt, black pepper, and red pepper flakes if using.
  • If the sauce is too thick, add reserved pasta water a little at a time to reach the desired consistency.

4. Combine Everything

  • Add the cooked pasta to the skillet and toss to coat in the sauce.
  • Return the steak to the pan, stirring gently to combine.
  • Let everything heat through for 1-2 minutes.

5. Serve and Garnish

  • Divide the pasta onto plates or into bowls.
