Instructions

  • Preheat the Oven
    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  • Mix the Dry Ingredients
    In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

  • Cream Butter and Sugar
    In a large bowl, cream together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).

  • Add Egg and Vanilla
    Beat in the egg and vanilla extract until fully combined.

  • Incorporate the Dry Ingredients
    Gradually add the dry ingredients to the butter mixture and mix until just combined.

  • Add Ground Almonds
    Stir in the ground almonds (or almond meal) until the dough comes together and is smooth.

  • Shape the Cookies
    Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.

  • Create a Well for the Jam
    Use your thumb or the back of a spoon to make a small indentation in the center of each dough ball.

  • Fill with Jam
    Spoon a small amount of raspberry jam into the center of each cookie.

  • Add Almond Slices (Optional)
    Place a few slices of almonds on top of each cookie for extra texture and flavor, if desired.
