- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/3 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup ground almonds (or almond meal)
- 1/4 cup raspberry jam (or preserves)
- Sliced almonds, for topping (optional)
Instructions
-
Preheat the Oven
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. -
Mix the Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. -
Cream Butter and Sugar
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes). -
Add Egg and Vanilla
Beat in the egg and vanilla extract until fully combined. -
Incorporate the Dry Ingredients
Gradually add the dry ingredients to the butter mixture and mix until just combined. -
Add Ground Almonds
Stir in the ground almonds (or almond meal) until the dough comes together and is smooth. -
Shape the Cookies
Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. -
Create a Well for the Jam
Use your thumb or the back of a spoon to make a small indentation in the center of each dough ball. -
Fill with Jam
Spoon a small amount of raspberry jam into the center of each cookie. -
Add Almond Slices (Optional)
Place a few slices of almonds on top of each cookie for extra texture and flavor, if desired. -
Bake the Cookies
Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
-
Cool and Serve
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
