Ingredients
- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade)
- 1 can (10 oz) diced tomatoes with green chilies
- 1 can (8 oz) tomato sauce
- 2 cups beef broth (or chicken broth)
- 8 oz spaghetti, broken in half
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup sour cream (optional, for serving)
- 1/4 cup chopped fresh cilantro (optional, for garnish)
- Sliced jalapeños, avocado, or crushed tortilla chips (optional toppings)
Instructions
Step 1: Prepare the Meat
In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat. Add the diced onion and minced garlic, cooking for another 2-3 minutes until fragrant.
Step 2: Add Ingredients to the Slow Cooker
Transfer the cooked beef mixture to your crockpot. Stir in the taco seasoning, diced tomatoes with green chilies, tomato sauce, and beef broth.
Step 3: Slow Cook
Cover and cook on low for 4 hours or high for 2 hours, allowing the flavors to meld.
Step 4: Add the Spaghetti
Break the spaghetti in half and stir it into the mixture. Make sure the noodles are submerged in the liquid. Cover and cook on low for an additional 20-30 minutes, or until the pasta is tender.
Step 5: Add Cheese and Serve
Stir in the shredded cheddar and Monterey Jack cheese until melted and combined. Serve hot, topped with optional garnishes like sour cream, cilantro, jalapeños, or avocado.
