Chicken Marinade
  • 1 ½ lbs boneless, skinless chicken breast (cut into bite-sized pieces)

  • 2 tablespoons soy sauce

  • 1 tablespoon honey

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • ½ teaspoon black pepper

  • ½ teaspoon paprika

Rice and Sauce
  • 1 ½ cups jasmine rice

  • 2 cups chicken broth

  • 1 cup pineapple juice

  • 1 ½ cups pineapple chunks (fresh or canned)

  • 1 red bell pepper, diced

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 tablespoon soy sauce

  • 1 tablespoon honey

  • 1 teaspoon ginger, grated

  • ½ teaspoon red pepper flakes (optional)

  • 1 tablespoon olive oil

  • 2 green onions, chopped (for garnish)

  • Sesame seeds (for garnish, optional)


Instructions

Step 1: Marinate the Chicken
  1. In a bowl, mix soy sauce, honey, olive oil, garlic powder, black pepper, and paprika.

  2. Add chicken pieces to the marinade and let sit for at least 20 minutes (or refrigerate for up to 2 hours).

Step 2: Cook the Chicken
  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

  2. Add the marinated chicken and cook for 5-7 minutes, until golden brown and fully cooked.

  3. Remove from the pan and set aside.

Step 3: Sauté the Vegetables
  1. In the same skillet, add onion, red bell pepper, and minced garlic.

  2. Sauté for 3-4 minutes until softened.

Step 4: Cook the Rice
  1. Stir in jasmine rice and toast lightly for about 1 minute.

  2. Add chicken broth, pineapple juice, soy sauce, honey, ginger, and red pepper flakes.

  3. Stir everything together and bring to a simmer.

Step 5: Combine Everything
  1. Add pineapple chunks and cooked chicken back to the skillet.

  2. Cover and simmer for 15-18 minutes until rice is tender and liquid is absorbed.

  3. Remove from heat and let sit for 5 minutes before fluffing with a fork.

Step 6: Garnish and Serve

 

  1. Sprinkle with chopped green onions and sesame seeds.

  2. Serve hot and enjoy!
