One-Skillet Sweet Corn Fried Rice with Kielbasa

  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Description

A quick and easy one-skillet meal, this Sweet Corn Fried Rice with Kielbasa combines smoky sausage, sweet corn, and savory fried rice for a flavorful, budget-friendly dish. Perfect for busy weeknights with minimal cleanup.

Ingredients

Scale
  • 1 tablespoon vegetable oil
  • 12 ounces kielbasa sausage, sliced into rounds
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup sweet corn (fresh, frozen, or canned)
  • 2 cups cooked rice (preferably day-old)
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • 2 eggs, lightly beaten
  • 2 green onions, chopped (for garnish)
  • Optional: red pepper flakes or sriracha for spice

Instructions

  1. Cook the Kielbasa: Heat vegetable oil in a large skillet over medium heat. Add kielbasa slices and cook until browned, about 3-4 minutes per side. Remove from the pan and set aside.
  2. Sauté the Aromatics: In the same skillet, add minced garlic and diced onion. Sauté until fragrant and the onion turns translucent, about 2-3 minutes.
  3. Add the Corn and Rice: Stir in the sweet corn and cook for a minute. Add the cooked rice, breaking up any clumps. Let cook for 3-4 minutes, allowing the rice to crisp slightly.
  4. Season the Rice: Pour in soy sauce, sesame oil, and black pepper. Stir well to combine.
  5. Scramble the Eggs: Push the rice mixture to one side. Pour the beaten eggs into the empty space and scramble until fully cooked. Mix eggs into the rice.
  6. Add Kielbasa Back: Return cooked kielbasa to the skillet and stir. Cook for another 2 minutes to blend flavors.
  7. Garnish and Serve: Turn off heat, sprinkle with green onions, and serve immediately. Add red pepper flakes or sriracha for extra spice.

Notes

  • Variations: Add bell peppers, peas, or carrots. Swap kielbasa for chicken, shrimp, or tofu. Use brown rice or quinoa for a healthier option.
  • Storage: Store in an airtight container in the fridge for up to 4 days or freeze for up to 2 months.
  • Reheating: Warm in a skillet over medium heat with a splash of water or microwave in short intervals, stirring in between.
