Description

Ingredients

  • 1 tablespoon olive oil
  • 3 large yellow onions, thinly sliced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • 1 teaspoon sugar (optional, to help caramelization)
  • 3 cloves garlic, minced
  • ½ cup dry white wine (optional)
  • 4 cups beef or vegetable broth
  • 8 ounces fettuccine or linguine
  • ½ cup heavy cream
  • 1 cup shredded Gruyère or Swiss cheese
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon Worcestershire sauce

 

  • Fresh parsley or chives for garnish

Instructions

  • Caramelize the Onions

    • In a large pot, melt butter with olive oil over medium heat.
    • Add sliced onions, salt, pepper, and thyme. Stir to coat.
    • Cook for 25-30 minutes, stirring occasionally, until golden brown. If sticking, deglaze with a splash of water.
    • (Optional) Sprinkle sugar to enhance caramelization.
  • Add Garlic and Wine

    • Stir in garlic and cook for 1 minute until fragrant.
    • Pour in white wine (if using) and deglaze the pot, scraping up browned bits. Simmer for 2-3 minutes.
  • Cook the Pasta

    • Add broth and bring to a gentle boil.
    • Add pasta and cook per package instructions, stirring occasionally. Add more broth or water if needed.
  • Make It Creamy

    • Once pasta is cooked and most liquid is absorbed, lower heat.
    • Stir in heavy cream, Worcestershire sauce, and shredded Gruyère cheese. Toss until creamy.

 

  • Serve

    • Sprinkle with Parmesan and fresh herbs. Serve immediately.
