  • Total Time: 35 minutes
  • Yield: 12 muffins 1x

Description

Moist turnip muffins are a unique and flavorful treat with warm spices, natural sweetness, and a tender crumb. Perfect for breakfast or snacks, these muffins are easy to make and packed with nutrients.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • ½ cup vegetable oil (or melted butter)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup grated turnip (peeled and finely shredded)
  • ½ cup milk or buttermilk
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup raisins or dried cranberries (optional)

Instructions

  1. Prepare for Baking
Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease it lightly.
  2. Mix the Dry Ingredients
In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Combine the Wet Ingredients
In a separate bowl, whisk together sugar, brown sugar, oil, eggs, and vanilla extract until smooth.
  4. Add the Turnip
Stir the grated turnip into the wet mixture to enhance moisture.
  5. Combine Wet and Dry Mixtures
Gradually add the dry ingredients to the wet mixture, alternating with milk. Stir gently until just combined—do not overmix.
  6. Fold in Optional Additions
If using nuts or dried fruit, fold them into the batter.
  7. Fill and Bake
Divide the batter evenly among the muffin cups, filling each about ¾ full. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool and Enjoy
Allow muffins to cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Spiced Ginger Turnip Muffins – Add ½ teaspoon ground ginger and a pinch of cloves.
  • Turnip and Apple Muffins – Replace half the grated turnip with grated apple.
  • Turnip Muffins with a Streusel Topping – Top with a mixture of brown sugar, butter, and oats.
