Description

Ingredients

  • 1 cup sourdough discard (100% hydration)
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup hot water

 


Instructions

  1. Preheat & Prepare: Preheat oven to 350°F (175°C). Grease and flour an 8×8-inch baking pan or line it with parchment paper.
  2. Mix Wet Ingredients: In a large bowl, whisk melted butter, brown sugar, and molasses until smooth. Add the egg and vanilla, then mix in the sourdough discard.
  3. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  4. Mix the Batter: Gradually mix dry ingredients into the wet mixture until just combined. Slowly stir in hot water until the batter is smooth.
  5. Bake: Pour batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool & Serve: Let cool in the pan for 10 minutes, then transfer to a wire rack. Serve warm or at room temperature.
