Ingredients

Scale

For the Chicken:

  • 2 large boneless, skinless chicken breasts (cut in half lengthwise to make four thinner pieces)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 2 tablespoons olive oil

For the Parmesan Crust:

  • 1/2 cup ranch dressing
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup shredded provolone cheese
  • 1/2 teaspoon garlic powder
  • 1 teaspoon lemon juice

For the Crispy Topping:

  • 1/2 cup panko breadcrumbs
  • 2 tablespoons butter, melted

Instructions

1. Prepare the Chicken

  • In a small bowl, mix salt, black pepper, garlic powder, onion powder, and paprika.
  • Pat the chicken dry with a paper towel and season both sides evenly with the spice mixture.

2. Cook the Chicken

  • Heat olive oil in a large skillet over medium-high heat.
  • Cook the chicken for about 5-6 minutes per side until golden brown and cooked through (internal temperature should reach 165°F).
  • Remove from heat and transfer to a baking dish.

3. Make the Parmesan Crust

  • In a small bowl, mix ranch dressing, grated Parmesan, shredded Parmesan, shredded provolone, garlic powder, and lemon juice until well combined.

4. Prepare the Crispy Topping

  • In another small bowl, mix panko breadcrumbs with melted butter.

5. Assemble and Broil

  • Spread the Parmesan crust mixture evenly over each piece of chicken.
  • Sprinkle the buttery panko topping on top.
  • Place under the broiler for 2-3 minutes, or until the cheese is bubbly and the topping is golden brown.

6. Serve

  • Let the chicken rest for a couple of minutes before serving.
  • Pair with mashed potatoes, roasted vegetables, or a fresh salad.

Notes

  • Spicy Kick: Add a pinch of cayenne pepper to the spice mix.
  • Different Cheese Blend: Try mozzarella or gouda instead of provolone.
  • Low-Carb Option: Skip the panko topping for a keto-friendly version.
