For the Chicken:
- 2 large boneless, skinless chicken breasts (cut in half lengthwise to make four thinner pieces)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 2 tablespoons olive oil
For the Parmesan Crust:
- 1/2 cup ranch dressing
- 1/4 cup grated Parmesan cheese
- 1/2 cup shredded Parmesan cheese
- 1/2 cup shredded provolone cheese
- 1/2 teaspoon garlic powder
- 1 teaspoon lemon juice
For the Crispy Topping:
- 1/2 cup panko breadcrumbs
- 2 tablespoons butter, melted
Instructions
1. Prepare the Chicken
- In a small bowl, mix salt, black pepper, garlic powder, onion powder, and paprika.
- Pat the chicken dry with a paper towel and season both sides evenly with the spice mixture.
2. Cook the Chicken
- Heat olive oil in a large skillet over medium-high heat.
- Cook the chicken for about 5-6 minutes per side until golden brown and cooked through (internal temperature should reach 165°F).
- Remove from heat and transfer to a baking dish.
3. Make the Parmesan Crust
- In a small bowl, mix ranch dressing, grated Parmesan, shredded Parmesan, shredded provolone, garlic powder, and lemon juice until well combined.
4. Prepare the Crispy Topping
- In another small bowl, mix panko breadcrumbs with melted butter.
5. Assemble and Broil
- Spread the Parmesan crust mixture evenly over each piece of chicken.
- Sprinkle the buttery panko topping on top.
- Place under the broiler for 2-3 minutes, or until the cheese is bubbly and the topping is golden brown.
6. Serve
- Let the chicken rest for a couple of minutes before serving.
- Pair with mashed potatoes, roasted vegetables, or a fresh salad.
