Ingredients

Scale
  • 1 (32-ounce) bag frozen tater tots
  • 1 pound ground beef
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 cup barbecue sauce
  • 2 cups shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup sliced jalapeños (fresh or pickled)
  • 1/2 cup diced red onion
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

Step 1: Bake the Tater Tots

  • Preheat oven to 425°F (220°C).
  • Spread frozen tater tots on a baking sheet.
  • Bake according to package instructions (25-30 minutes) until crispy and golden.

Step 2: Prepare the Beef Mixture

  • While tater tots bake, heat a large skillet over medium-high heat.
  • Add ground beef, cook until browned (5-7 minutes), and drain excess grease.
  • Season with salt, pepper, smoked paprika, and garlic powder.
  • Stir in barbecue sauce and simmer for 2-3 minutes. Remove from heat.

Step 3: Assemble the Nachos

  • Lower oven temperature to 375°F (190°C).
  • Transfer tater tots to an oven-safe dish or leave on the baking sheet.
  • Spread barbecue beef mixture evenly over tater tots.
  • Sprinkle shredded cheddar cheese on top.
  • Bake for 5-7 minutes until cheese melts and is bubbly.

Step 4: Add Toppings and Serve

  • Remove from oven and immediately top with bacon, jalapeños, red onion, and tomatoes.
  • Drizzle with sour cream and garnish with green onions and cilantro.
  • Serve hot and enjoy!

Notes

  • Pulled Pork Option: Substitute ground beef with pulled pork tossed in BBQ sauce.
  • Spicy Kick: Add extra jalapeños or drizzle with hot sauce.
  • Tex-Mex Twist: Swap BBQ sauce for taco seasoning and add black beans and corn.
  • Vegetarian Option: Use plant-based crumbles or black beans.
  • Extra Cheesy: Mix in Monterey Jack or pepper jack cheese.
