  • 4 boneless, skinless chicken breasts
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1 1/2 cups marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 2 tablespoons olive oil

 

  • 1/2 cup chicken broth

Instructions

  • Prepare the Chicken:

    • In a shallow bowl, combine breadcrumbs, Parmesan cheese, basil, garlic powder, salt, and pepper.
    • In another bowl, beat the eggs.
    • Dip each chicken breast into the egg, then coat in the breadcrumb mixture, pressing gently to ensure it sticks.
  • Sauté the Chicken:

    • Turn the Instant Pot to the “Sauté” function and heat the olive oil.
    • Add the chicken breasts in batches (don’t overcrowd) and sauté for 2-3 minutes per side until golden brown. Remove chicken and set aside.
  • Deglaze the Pot:

    • Add chicken broth to the Instant Pot, scraping the bottom with a wooden spoon to remove browned bits.
  • Pressure Cook:

    • Return the chicken to the Instant Pot in a single layer.
    • Pour marinara sauce over the chicken.
    • Lock the lid and set the Instant Pot to high pressure for 8 minutes.
  • Release Pressure:

    • Once the cooking time is up, allow the pressure to naturally release for 5 minutes, then perform a quick release for the remaining pressure.
  • Add Cheese & Broil:

    • Remove the chicken from the Instant Pot and place on a baking dish.
    • Spoon some sauce from the Instant Pot over the chicken, then sprinkle shredded mozzarella on top.
    • Broil for 2-3 minutes or until the cheese is melted and bubbly.

 

  • Serve:

    • Serve with pasta, a side of vegetables, or a simple salad. Add extra marinara sauce if desired.
