For the Chipotle Sauce:
- 1/2 cup Greek yogurt or sour cream
- 1 chipotle pepper in adobo sauce, minced
- 1 tablespoon lime juice
- 1 teaspoon honey
- 1/4 teaspoon salt
Instructions
Step 1: Marinate the Chicken
- In a mixing bowl, combine minced chipotle peppers, adobo sauce, honey, lime juice, olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Add the chicken to the marinade, ensuring it’s fully coated. Cover and refrigerate for at least 30 minutes (or up to 8 hours for deeper flavor).
Step 2: Cook the Chicken
- Preheat a grill or skillet over medium-high heat.
- Cook the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
- Remove from heat and let the chicken rest for 5 minutes before slicing.
Step 3: Prepare the Chipotle Sauce
- In a small bowl, mix Greek yogurt (or sour cream), minced chipotle pepper, lime juice, honey, and salt.
- Stir until well combined and set aside.
Step 4: Assemble the Bowls
- Divide the cooked rice among serving bowls.
- Top with sliced chicken, black beans, corn, cherry tomatoes, avocado, cilantro, red onion, and crumbled cheese.
