  • Total Time: 55-60 minutes
  • Yield: 1 loaf 1x

Description

Healthy sourdough discard apple bread is a moist, lightly spiced quick bread that repurposes sourdough discard with the natural sweetness of apples. Perfect for breakfast or snacks, this nutritious treat is made with wholesome ingredients like whole wheat flour, honey, and Greek yogurt.

Ingredients

Scale
  • 1 cup sourdough discard (unfed)
  • 1 cup whole wheat flour (or all-purpose flour)
  • 1/2 cup rolled oats (optional, for texture)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/2 cup unsweetened applesauce
  • 1/3 cup honey or maple syrup
  • 1/4 cup olive oil (or melted coconut oil)
  • 1 teaspoon vanilla extract
  • 1 cup grated apple (about 1 large apple)
  • 1/2 cup chopped nuts or raisins (optional)

Instructions

  1. Prepare the Ingredients
    • Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. Mix the Dry Ingredients
    • In a large bowl, whisk together flour, oats, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. Combine the Wet Ingredients
    • In a separate bowl, whisk eggs, then add sourdough discard, applesauce, honey (or maple syrup), olive oil, and vanilla extract. Stir until well combined.
  4. Incorporate Apples and Dry Ingredients
    • Gradually add dry ingredients to wet ingredients, stirring until just combined. Fold in grated apple and optional nuts or raisins.
  5. Bake the Bread
    • Pour batter into prepared loaf pan and spread evenly. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool and Serve
    • Let bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!

Notes
