Instructions
- Prepare the Chicken – If using a rotisserie chicken, remove the skin and bones, then shred or cube the meat.
- Mix the Base Ingredients – In a large bowl, combine the shredded chicken, celery, and shredded cheddar cheese.
- Prepare the Dressing – In a small bowl, whisk together mayonnaise, plain yogurt, lemon juice, and Dijon mustard until smooth.
- Combine and Season – Pour the dressing over the chicken mixture, stirring to coat evenly. Season with salt and black pepper.
- Assemble the Sandwiches – Lay out bread slices. Optionally, add lettuce and tomato. Spoon the chicken salad mixture onto the prepared slices and top with remaining bread.
