  • 1.5 lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp unsalted butter, melted
  • 1 tbsp chopped parsley (optional, for garnish)
  • 1/4 tsp red pepper flakes (optional, for spice)

Instructions

Step 1: Preheat and Prepare Ingredients
Preheat oven to 400°F (200°C). Lightly grease a large baking sheet or line with parchment paper.

Step 2: Season the Potatoes
In a large bowl, toss halved potatoes with 1.5 tbsp olive oil, half the minced garlic, salt, pepper, Italian seasoning, and paprika. Spread on one side of the baking sheet.

Step 3: Season the Chicken
Rub chicken with remaining olive oil. Season with salt, pepper, Italian seasoning, and paprika. Place on the other side of the baking sheet.

Step 4: Bake the Chicken and Potatoes
Bake for 20 minutes, then remove the tray. Flip the chicken and stir the potatoes for even cooking.

Step 5: Add the Parmesan Coating
In a small bowl, mix melted butter, remaining garlic, Parmesan cheese, and red pepper flakes. Drizzle over the chicken and potatoes.

Step 6: Finish Baking
Return to oven and bake another 10-15 minutes, until chicken reaches 165°F (75°C) and potatoes are crispy.

Step 7: Garnish and Serve
Sprinkle chopped parsley before serving. Enjoy immediately!
