  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon lemon juice (optional, for brightness)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat & Prepare Ingredients: Preheat oven to 400°F (200°C). Lightly grease a large baking sheet or line with parchment paper.
  2. Season the Chicken: Mix salt, pepper, paprika, oregano, thyme, and red pepper flakes in a bowl. Rub seasoning blend evenly over chicken breasts.
  3. Coat the Potatoes: In a bowl, toss halved potatoes with 2 tablespoons olive oil, minced garlic, and half of the parmesan cheese.
  4. Arrange on the Baking Sheet: Place seasoned chicken on one side of the sheet and potatoes on the other.
  5. Bake: Drizzle remaining olive oil over chicken and potatoes. Bake for 25-30 minutes until chicken reaches 165°F (75°C) and potatoes are tender.
  6. Final Touches: Remove from oven, brush melted butter over chicken, and sprinkle remaining parmesan cheese over everything. Broil for 2-3 minutes until golden and crispy.
  7. Serve and Garnish: Squeeze lemon juice over (if using) and sprinkle with fresh parsley. Serve immediately.
