Ingredients

  • 8 oz pasta (spaghetti, fettuccine, or penne)
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 8 oz mushrooms (cremini, button, or shiitake), sliced
  • 4 cloves garlic, minced
  • ½ tsp red pepper flakes (optional)
  • ½ cup heavy cream (or half-and-half for a lighter option)
  • ¼ cup grated Parmesan cheese
  • ½ cup vegetable or chicken broth
  • 1 tbsp fresh parsley, chopped
  • Salt and black pepper, to taste
  • Extra Parmesan and parsley for garnish

Instructions

  1. Cook the Pasta
    Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. Sauté the Mushrooms
    Heat olive oil and butter in a large skillet over medium heat. Add the sliced mushrooms and cook for 5–7 minutes until they release their moisture and become golden brown.
  3. Add Garlic & Seasoning
    Stir in the minced garlic and red pepper flakes (if using) and cook for another 1–2 minutes, until fragrant.
  4. Create the Sauce
    Pour in the broth and let it simmer for a couple of minutes to deglaze the pan. Then, add the heavy cream and Parmesan cheese, stirring until smooth and creamy. Season with salt and black pepper to taste.
  5. Combine with Pasta
    Add the cooked pasta to the skillet and toss to coat. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency.
  6. Garnish & Serve
    Remove from heat and stir in the fresh parsley. Serve immediately, garnished with extra Parmesan and parsley.
