- 8 oz pasta (spaghetti, fettuccine, or penne)
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 8 oz mushrooms (cremini, button, or shiitake), sliced
- 4 cloves garlic, minced
- ½ tsp red pepper flakes (optional)
- ½ cup heavy cream (or half-and-half for a lighter option)
- ¼ cup grated Parmesan cheese
- ½ cup vegetable or chicken broth
- 1 tbsp fresh parsley, chopped
- Salt and black pepper, to taste
- Extra Parmesan and parsley for garnish
Instructions
- Cook the Pasta
Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve ½ cup of pasta water before draining. - Sauté the Mushrooms
Heat olive oil and butter in a large skillet over medium heat. Add the sliced mushrooms and cook for 5–7 minutes until they release their moisture and become golden brown. - Add Garlic & Seasoning
Stir in the minced garlic and red pepper flakes (if using) and cook for another 1–2 minutes, until fragrant. - Create the Sauce
Pour in the broth and let it simmer for a couple of minutes to deglaze the pan. Then, add the heavy cream and Parmesan cheese, stirring until smooth and creamy. Season with salt and black pepper to taste. - Combine with Pasta
Add the cooked pasta to the skillet and toss to coat. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency. - Garnish & Serve
Remove from heat and stir in the fresh parsley. Serve immediately, garnished with extra Parmesan and parsley.
