Ingredients

1 lb sirloin steak (or ribeye, cut into bite-sized pieces)

1 1/2 lbs baby potatoes, halved

Instructions
Prepare the Ingredients

Wash and halve the baby potatoes. Cut larger potatoes into small, even pieces.

Pat the steak pieces dry with paper towels for a good sear.
2. Cook the Potatoes

Heat 1 tbsp olive oil and 1 tbsp butter in a large skillet over medium heat.

Add the potatoes, season with salt, black pepper, and smoked paprika.

Cook for about 15 minutes, stirring occasionally, until golden brown and fork-tender.

Transfer the potatoes to a plate and set aside.
3. Sear the Steak

In the same skillet, add 1 tbsp olive oil and heat over medium-high.

Add steak bites in a single layer, ensuring they are not overcrowded.

Season with salt, black pepper, and red pepper flakes (if using).

Sear for 2-3 minutes per side until browned and cooked to desired doneness.

Remove steak from the pan and set aside.
4. Make the Garlic Butter Sauce

Reduce heat to medium-low and add the remaining 1 tbsp butter.

Stir in the garlic, oregano, and thyme, cooking for about 30 seconds until fragrant.
5. Combine and Serve

Return the potatoes and steak to the skillet, tossing everything in the garlic butter sauce.

Cook for another 2 minutes to meld flavors.
