Description

  • 1 lb sirloin steak (or ribeye, cut into bite-sized pieces)

  • 1 1/2 lbs baby potatoes, halved

  • 3 tbsp unsalted butter, divided

  • 2 tbsp olive oil

  • 4 cloves garlic, minced

  • 1 tsp salt (adjust to taste)

  • 1/2 tsp black pepper

  • 1 tsp smoked paprika

  • 1/2 tsp crushed red pepper flakes (optional)

  • 1 tsp dried oregano or Italian seasoning

  • 2 tbsp fresh parsley, chopped

  • 1 tsp fresh thyme leaves (or 1/2 tsp dried)


Instructions

Prepare the Ingredients

  • Wash and halve the baby potatoes. Cut larger potatoes into small, even pieces.

  • Pat the steak pieces dry with paper towels for a good sear.

2. Cook the Potatoes

  • Heat 1 tbsp olive oil and 1 tbsp butter in a large skillet over medium heat.

  • Add the potatoes, season with salt, black pepper, and smoked paprika.

  • Cook for about 15 minutes, stirring occasionally, until golden brown and fork-tender.

  • Transfer the potatoes to a plate and set aside.

3. Sear the Steak

  • In the same skillet, add 1 tbsp olive oil and heat over medium-high.

  • Add steak bites in a single layer, ensuring they are not overcrowded.

  • Season with salt, black pepper, and red pepper flakes (if using).

  • Sear for 2-3 minutes per side until browned and cooked to desired doneness.

  • Remove steak from the pan and set aside.

4. Make the Garlic Butter Sauce

  • Reduce heat to medium-low and add the remaining 1 tbsp butter.

  • Stir in the garlic, oregano, and thyme, cooking for about 30 seconds until fragrant.

5. Combine and Serve

  • Return the potatoes and steak to the skillet, tossing everything in the garlic butter sauce.

  • Cook for another 2 minutes to meld flavors.

  • Garnish with fresh parsley and serve immediately.
