For the Creamy Parmesan Pasta:

  • 8 ounces pasta (fettuccine, spaghetti, or penne)
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup reserved pasta water (if needed for thinning the sauce)

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2: Prepare the Chicken Bites

  1. In a bowl, season the chicken pieces with salt, pepper, paprika, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken pieces in a single layer and sear for 3-4 minutes on one side until golden brown.
  4. Flip the chicken pieces, add butter, and continue cooking for another 3-4 minutes until cooked through.
  5. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  6. Remove the chicken from the skillet and set aside.

Step 3: Make the Creamy Parmesan Sauce

  1. In the same skillet, melt butter over medium heat.
  2. Add the minced garlic and cook for about 30 seconds until fragrant.
  3. Pour in the heavy cream and stir well.
  4. Add the Parmesan cheese, salt, black pepper, Italian seasoning, and crushed red pepper flakes (if using).
  5. Stir continuously until the sauce thickens (about 3-4 minutes). If needed, add a bit of reserved pasta water to reach the desired consistency.

Step 4: Combine and Serve

  1. Add the drained pasta to the sauce, tossing well to coat.
  2. Return the chicken bites to the skillet, stirring to combine.
  3. Garnish with chopped fresh parsley.
  4. Serve immediately with extra Parmesan on top if desired.
