Description

Ingredients

  • 4 slices sourdough or whole-grain bread
  • ½ cup feta cheese, crumbled
  • ½ cup shredded mozzarella or provolone cheese
  • ¼ cup black or green olives, chopped
  • 2 tbsp butter, softened
  • ½ tsp dried oregano (optional)

 

  • ½ tsp garlic powder (optional)

Instructions

Prepare the Filling

  1. In a bowl, mix crumbled feta, shredded mozzarella (or provolone), and chopped olives.
  2. Add dried oregano and garlic powder if using. Stir to combine.

Assemble the Sandwich

  1. Spread butter on one side of each bread slice.
  2. Place two slices, butter-side down, on a clean surface.
  3. Evenly distribute the cheese and olive mixture over the slices.
  4. Top with the remaining bread slices, butter-side up.

Grill the Sandwiches

  1. Heat a skillet or griddle over medium heat.
  2. Place the sandwiches in the pan and cook for 3–4 minutes per side, until golden brown and crispy, and the cheese is melted.
  3. Press down lightly with a spatula for even crisping.
