Instructions

  • Prepare the Zucchini – Grate zucchini and sprinkle with salt. Let sit for 10 minutes to release moisture.
  • Remove Excess Water – Squeeze zucchini with a kitchen towel or paper towels to remove water.
  • Mix the Ingredients – In a large bowl, combine zucchini, feta, Parmesan, garlic, oregano, black pepper, red pepper flakes (if using), flour, baking powder, eggs, parsley (or dill), and green onions. Stir to form a thick batter.
  • Heat the Oil – Warm olive oil in a large skillet over medium heat.
  • Fry the Fritters – Scoop 2 tablespoons of batter per fritter into the pan. Flatten slightly and cook for 2-3 minutes per side until golden and crispy.
  • Drain and Serve – Place fritters on paper towels to absorb excess oil. Serve warm with Greek yogurt or tzatziki and a squeeze of lemon.
