- 2 boneless, skinless chicken breasts (or 2 cups cooked shredded chicken)
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup sun-dried tomatoes, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon red pepper flakes (optional)
- ½ cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
Step 1: Cook the Chicken
- Heat olive oil in a large pot over medium heat.
- Season chicken with salt and pepper, then sear for 3–4 minutes per side until golden brown.
- Remove and set aside.
Step 2: Build the Soup Base
- In the same pot, cook sun-dried tomatoes for 1–2 minutes until fragrant.
- Add chicken broth and bring to a simmer.
Step 3: Shred the Chicken
- If using cooked chicken, shred it now.
- If using raw chicken, return it to the pot and simmer for 15 minutes until fully cooked. Shred and return to the pot.
Step 4: Add Cream and Seasonings
- Stir in heavy cream, garlic powder, onion powder, oregano, basil, and red pepper flakes.
- Simmer for 5 minutes.
Step 5: Finish with Cheese
- Add Parmesan cheese, stirring until melted and incorporated.
- Adjust seasoning as needed.
Step 6: Serve and Garnish
- Ladle into bowls and garnish with fresh basil or parsley.
- Serve warm with crusty bread or over rice for a heartier meal.

- Dairy-Free: Use coconut cream and nutritional yeast instead of Parmesan.
- Thicker Soup: Add a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water).
