  • 2 boneless, skinless chicken breasts (or 2 cups cooked shredded chicken)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

 

  • Fresh basil or parsley for garnish

Instructions

Step 1: Cook the Chicken

  • Heat olive oil in a large pot over medium heat.
  • Season chicken with salt and pepper, then sear for 3–4 minutes per side until golden brown.
  • Remove and set aside.

Step 2: Build the Soup Base

  • In the same pot, cook sun-dried tomatoes for 1–2 minutes until fragrant.
  • Add chicken broth and bring to a simmer.

Step 3: Shred the Chicken

  • If using cooked chicken, shred it now.
  • If using raw chicken, return it to the pot and simmer for 15 minutes until fully cooked. Shred and return to the pot.

Step 4: Add Cream and Seasonings

  • Stir in heavy cream, garlic powder, onion powder, oregano, basil, and red pepper flakes.
  • Simmer for 5 minutes.

Step 5: Finish with Cheese

  • Add Parmesan cheese, stirring until melted and incorporated.
  • Adjust seasoning as needed.

Step 6: Serve and Garnish

 

  • Ladle into bowls and garnish with fresh basil or parsley.
  • Serve warm with crusty bread or over rice for a heartier meal.

  • Dairy-Free: Use coconut cream and nutritional yeast instead of Parmesan.
  • Thicker Soup: Add a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water).
