Ingredients

Scale
  • 4 cups (500g) all-purpose or bread flour
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1 1/2 teaspoons salt
  • 1 3/4 cups (415ml) warm water (about 110°F/45°C)
  • 1/4 cup (60ml) olive oil, plus more for greasing and drizzling
  • 1 teaspoon sugar
  • 2 teaspoons fresh rosemary (or other herbs of choice)
  • Flaky sea salt, for topping

Instructions

  1. Activate the Yeast – In a large mixing bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.
  2. Mix the Dough – Add flour and salt to the yeast mixture, stirring until a sticky dough forms. Drizzle in olive oil and mix well.
  3. First Rise – Cover and let the dough rise at room temperature for 1 to 2 hours, or until doubled.
  4. Prepare the Baking Pan – Grease a 9×13-inch baking pan with olive oil. Transfer dough and stretch to fit. Let rest for 30 minutes.
  5. Create the Dimples – Preheat oven to 425°F (220°C). Use oiled fingertips to press dimples all over dough. Drizzle with olive oil, flaky salt, and herbs.
  6. Bake the Focaccia – Bake for 20–25 minutes, until golden brown and crispy.
  7. Cool and Serve – Let cool slightly before slicing. Serve warm or at room temperature.
