Ingredients
Scale
- 2 large boneless, skinless chicken breasts (halved to make 4 cutlets)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic (minced)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional)
- 3/4 cup grated parmesan cheese
- 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening, if needed)
- Fresh parsley (chopped, for garnish)
Instructions
- Prepare the Chicken:
- Slice the chicken breasts in half horizontally to create thinner cutlets.
- Season both sides with salt, black pepper, and paprika.
- Sear the Chicken:
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken and cook for 4-5 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
- Make the Creamy Sauce:
- Reduce heat to medium and add the butter to the skillet.
- Once melted, stir in the minced garlic and cook for about 30 seconds until fragrant.
- Pour in the heavy cream, chicken broth, Italian seasoning, and crushed red pepper flakes. Stir well.
- Let the sauce simmer for 3-4 minutes, then stir in the parmesan cheese until fully melted.
- If the sauce is too thin, add the cornstarch slurry and stir until thickened.
- Combine and Serve:
- Return the cooked chicken to the skillet, spooning the sauce over the top.
- Let everything simmer for another 2 minutes, allowing the flavors to meld.
- Garnish with fresh parsley and serve immediately with pasta, rice, or vegetables.
Notes
- Mushroom Addition: Add 1 cup of sliced mushrooms when sautéing the garlic for extra depth of flavor.
- Spinach Upgrade: Stir in a handful of baby spinach at the end for a touch of greens.
- Lighter Option: Substitute half-and-half or milk for heavy cream to reduce the richness.
- Cheese Swap: Use grated Asiago or Pecorino Romano for a different cheesy twist.
- Extra Heat: Increase the red pepper flakes or add a pinch of cayenne for a spicier version.
