Description

Ingredients

  • 6 large eggs, hard-boiled and chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard (or yellow mustard)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon paprika (plus extra for garnish)
  • 1/4 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely diced
  • 1/4 cup dill pickles, finely chopped (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Pasta
    Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside to cool.
  2. Prepare the Eggs
    Place the eggs in a saucepan, cover with water, and bring to a boil. Once boiling, turn off the heat, cover, and let sit for 10-12 minutes. Drain, cool in ice water, then peel and chop the eggs.
  3. Make the Dressing
    In a large mixing bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, sugar, paprika, garlic powder, salt, and black pepper until smooth and well combined.
  4. Assemble the Salad
    Add the cooled pasta, chopped eggs, celery, red onion, and pickles (if using) to the bowl with the dressing. Gently toss everything together until evenly coated.
  5. Chill and Serve
    Cover and refrigerate for at least 30 minutes to allow the flavors to meld. Before serving, garnish with fresh parsley and a sprinkle of paprika.
