Ingredients
Scale
- 1 pound ground beef (or ground turkey)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can corn, drained
- 1 (14.5-ounce) can diced tomatoes
- 1 (10-ounce) can diced tomatoes with green chilies (like Rotel)
- 1 (15-ounce) can tomato sauce
- 2 cups beef broth (or chicken broth)
- 1 packet taco seasoning (or homemade blend)
- 1 teaspoon cumin
- 1/2 teaspoon chili powder (adjust to taste)
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 1/2 teaspoon smoked paprika (optional)
Instructions
- Cook the Meat: In a large pot or Dutch oven, cook the ground beef over medium heat until browned, breaking it up as it cooks. Drain any excess grease.
- Sauté Aromatics: Add the diced onion and minced garlic to the pot and sauté for 2–3 minutes until softened and fragrant.
- Add Ingredients: Stir in the black beans, kidney beans, corn, diced tomatoes, Rotel, tomato sauce, and beef broth. Mix well.
- Season the Soup: Add the taco seasoning, cumin, chili powder, salt, black pepper, and smoked paprika. Stir to combine.
- Simmer: Bring the soup to a boil, then reduce the heat and let it simmer for 20–25 minutes to allow the flavors to meld. Stir occasionally.
- Serve: Ladle the taco soup into bowls and top with your favorite toppings. Serve with tortilla chips for extra crunch. Enjoy!
Notes
- Protein Swap: Use ground turkey, chicken, or even shredded rotisserie chicken.
- Vegetarian Option: Skip the meat and add an extra can of beans or lentils.
- Spicy Kick: Add diced jalapeños or extra chili powder.
- Slow Cooker Method: Brown the beef and onions, then add everything to a slow cooker. Cook on LOW for 6–8 hours or HIGH for 3–4 hours.
- Thicker Soup: Reduce the broth slightly or add a small can of refried beans for a creamier texture.
