- 1 small onion, thinly sliced
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon fresh thyme (or ¼ teaspoon dried thyme)
- ½ teaspoon fresh rosemary, chopped
- ½ cup ricotta cheese
- ¼ cup crumbled goat cheese (or feta)
- 1 egg (for egg wash)
Instructions
Step 1: Prepare the Dough
- In a bowl, whisk together the flour and salt.
- Add the cold, cubed butter and use a pastry cutter or your fingers to work it into the flour until it resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together.
- Shape the dough into a disk, wrap it in plastic, and refrigerate for at least 30 minutes.
Step 2: Roast the Squash
- Preheat the oven to 400°F (200°C).
- Toss the sliced delicata squash and onion with olive oil, salt, pepper, thyme, and rosemary.
- Spread on a baking sheet and roast for 15–20 minutes, or until tender. Let cool slightly.
Step 3: Assemble the Galette
- Roll out the chilled dough on a lightly floured surface into a 12-inch circle. Transfer to a parchment-lined baking sheet.
- Spread ricotta cheese over the dough, leaving a 2-inch border.
- Arrange the roasted squash and onion over the ricotta, then sprinkle with crumbled goat cheese.
- Fold the edges of the dough over the filling, pleating as needed.
- Beat the egg and brush it over the crust for a golden finish.
Step 4: Bake the Galette
- Preheat the oven to 375°F (190°C).
- Bake for 35–40 minutes, or until the crust is golden brown.
