Instructions

Step 1: Prepare the Dough

  1. In a bowl, whisk together the flour and salt.
  2. Add the cold, cubed butter and use a pastry cutter or your fingers to work it into the flour until it resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together.
  4. Shape the dough into a disk, wrap it in plastic, and refrigerate for at least 30 minutes.

Step 2: Roast the Squash

  1. Preheat the oven to 400°F (200°C).
  2. Toss the sliced delicata squash and onion with olive oil, salt, pepper, thyme, and rosemary.
  3. Spread on a baking sheet and roast for 15–20 minutes, or until tender. Let cool slightly.

Step 3: Assemble the Galette

  1. Roll out the chilled dough on a lightly floured surface into a 12-inch circle. Transfer to a parchment-lined baking sheet.
  2. Spread ricotta cheese over the dough, leaving a 2-inch border.
  3. Arrange the roasted squash and onion over the ricotta, then sprinkle with crumbled goat cheese.
  4. Fold the edges of the dough over the filling, pleating as needed.
  5. Beat the egg and brush it over the crust for a golden finish.

Step 4: Bake the Galette

  1. Preheat the oven to 375°F (190°C).
  2. Bake for 35–40 minutes, or until the crust is golden brown.
  3. Let the galette cool slightly before slicing and serving
