For the Chicken Cordon Bleu:
- 4 boneless, skinless chicken breasts
- 4 slices of ham
- 4 slices of Swiss cheese
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- 2 tablespoons olive oil
For the Creamy Sauce:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1½ cups milk
- 1 tablespoon Dijon mustard
- ½ cup grated Parmesan cheese
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Prepare the Chicken:
- Preheat oven to 375°F (190°C).
- Pound each chicken breast to ½-inch thickness between plastic wrap.
- Place a slice of ham and Swiss cheese on each, roll tightly, and secure with toothpicks if needed.
- Bread the Chicken:
- Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with salt, pepper, garlic powder, and paprika.
- Dredge each roll in flour, dip in egg, then coat with breadcrumbs.
- Heat olive oil in an oven-safe skillet over medium heat and sear chicken until golden brown (3-4 minutes per side).
- Transfer skillet to oven and bake for 20-25 minutes until chicken reaches 165°F (75°C).
- Make the Creamy Sauce:
- In a saucepan, melt butter over medium heat.
- Whisk in flour and cook for 1 minute.
- Slowly add milk, whisking continuously until thickened.
- Stir in Dijon mustard, Parmesan, salt, and pepper.
- Remove from heat and let cool slightly.
- Serve:
- Remove toothpicks from chicken, slice, and drizzle with sauce.
- Serve with vegetables or mashed potatoes.
