For the chicken:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
For the lemon-basil butter sauce:
- 4 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/2 cup dry white wine (such as Sauvignon Blanc)
- 2 tablespoons fresh lemon juice
- 1/4 cup unsalted butter (additional)
- 1/4 cup chopped fresh basil
- 1/4 teaspoon salt
For the toppings:
- 4 ounces goat cheese, sliced
- 1/3 cup sun-dried tomatoes, chopped
Instructions
- Prepare the Chicken
- Preheat your grill to medium-high heat (375-400°F).
- Brush both sides of the chicken breasts with olive oil and season evenly with salt, black pepper, and garlic powder.
- Grill the chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F.
- Remove from the grill and let it rest while preparing the sauce.
- Make the Lemon-Basil Butter Sauce
- In a saucepan over medium heat, melt 4 tablespoons of butter.
- Add the minced garlic and cook for about 30 seconds until fragrant.
- Pour in the white wine and lemon juice, bringing the mixture to a simmer. Let it reduce by half (about 3-4 minutes).
- Reduce the heat to low and stir in the remaining 1/4 cup butter until melted and smooth.
- Add the chopped basil and salt, stirring until well combined. Remove from heat.
- Assemble the Dish
- Place a slice of goat cheese on top of each grilled chicken breast.
- Sprinkle with chopped sun-dried tomatoes.
- Drizzle the warm lemon-basil butter sauce over the top.
- Serve immediately and enjoy!
