Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 teaspoon cinnamon
- 1/2 cup melted butter
Cheesecake Filling:
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1/4 cup heavy cream
Cinnamon Swirl:
- 1/2 cup brown sugar
- 2 tablespoons cinnamon
- 4 tablespoons melted butter
Honeybun Glaze:
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
Step 1: Prepare the Crust
- Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a bowl, mix graham cracker crumbs, sugar, cinnamon, and melted butter.
- Press mixture evenly into the bottom of the pan.
- Bake for 10 minutes, then set aside to cool.
Step 2: Make the Cheesecake Filling
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing after each addition.
- Stir in vanilla, sour cream, and heavy cream until fully incorporated.
Step 3: Add the Cinnamon Swirl
- In a small bowl, mix brown sugar, cinnamon, and melted butter.
- Pour half of the cheesecake filling over the crust.
- Drizzle half of the cinnamon mixture over the filling and swirl with a knife.
- Repeat with remaining cheesecake filling and cinnamon mixture.
Step 4: Bake the Cheesecake
- Place the springform pan in a larger baking dish and add hot water halfway up the sides (water bath method).
- Bake for 60-70 minutes, until the center is just set.
- Turn off the oven and leave the cheesecake inside for 1 hour.
- Remove and cool to room temperature before refrigerating for at least 4 hours or overnight.
Step 5: Make the Honeybun Glaze
- Whisk powdered sugar, milk, and vanilla extract together until smooth.
- Drizzle over the chilled cheesecake before serving.
