Description

Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 teaspoon cinnamon
  • 1/2 cup melted butter

Cheesecake Filling:

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup heavy cream

Cinnamon Swirl:

  • 1/2 cup brown sugar
  • 2 tablespoons cinnamon
  • 4 tablespoons melted butter

Honeybun Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

Step 1: Prepare the Crust

  1. Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a bowl, mix graham cracker crumbs, sugar, cinnamon, and melted butter.
  3. Press mixture evenly into the bottom of the pan.
  4. Bake for 10 minutes, then set aside to cool.

Step 2: Make the Cheesecake Filling

  1. In a large bowl, beat cream cheese and sugar until smooth.
  2. Add eggs one at a time, mixing after each addition.
  3. Stir in vanilla, sour cream, and heavy cream until fully incorporated.

Step 3: Add the Cinnamon Swirl

  1. In a small bowl, mix brown sugar, cinnamon, and melted butter.
  2. Pour half of the cheesecake filling over the crust.
  3. Drizzle half of the cinnamon mixture over the filling and swirl with a knife.
  4. Repeat with remaining cheesecake filling and cinnamon mixture.

Step 4: Bake the Cheesecake

  1. Place the springform pan in a larger baking dish and add hot water halfway up the sides (water bath method).
  2. Bake for 60-70 minutes, until the center is just set.
  3. Turn off the oven and leave the cheesecake inside for 1 hour.
  4. Remove and cool to room temperature before refrigerating for at least 4 hours or overnight.

Step 5: Make the Honeybun Glaze

  1. Whisk powdered sugar, milk, and vanilla extract together until smooth.
  2. Drizzle over the chilled cheesecake before serving.
